Entre le boeuf
Traditional
It is possible that Entre le boeuf is one of the oldest known French carols, dated in both the 13th and 16th century. The text describes the ox and grey ass (boeuf and l'ane gris) were present at the birth of Christ. The possibility of the presence of these animals is first written in Isaiah 1:3 "The ox knoweth his owner, and the ass his master's crib: but Israel doth not know, my people doth not consider." (King James). This work is written for SATB + piano.
